Description

This dish of Grilled Carrots with Cinnamon & Chipotle offers a delightful blend of sweet and spicy flavors. Easy to prepare, it’s perfect for a quick dinner or a healthy side dish that everyone will enjoy.


Ingredients

  • 2 pounds carrots (about 1216 medium carrots, about 1-inch in diameter)
  • 1 1/2 tablespoons coconut oil, melted
  • 1 teaspoon cinnamon
  • 1 teaspoon chipotle paste
  • 1/2 teaspoon chili powder
  • salt, to taste
  • for topping – fresh cilantro

Instructions

  1. Light the grill over medium-high heat and allow it to come up to temperature.
  2. Wash and peel the carrots.
  3. In a small bowl, mix coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub this mixture evenly over the carrots using your hands.
  4. Place the carrots on the hot grill over indirect heat and grill for 20-25 minutes, flipping and rotating them every 7-8 minutes. The cooking time may vary depending on carrot size; they should be slightly soft but still firm inside when done.
  5. Transfer the grilled carrots to a serving platter and top with fresh cilantro if desired.

Notes

Use fresh, firm carrots for the best texture and flavor.
Feel free to adjust the amount of chipotle paste according to your spice preference.
Serve with a drizzle of lemon juice for added brightness.
