- 1/4 cup olive oil
- 1/3 cup fresh lemon juice
- 2 tablespoons lemon zest (about the zest of two lemons)
- 1 small shallot diced fine
- 4 garlic cloves minced
- 1 tablespoon dijon mustard
- 1 tablespoon dried oregano
- 1 1/2 teaspoons kosher salt
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 4 pounds bone-in skin on chicken thighs
Instructions
- In a large bowl, mix together the olive oil, lemon juice, lemon zest, shallot, garlic, dijon mustard, oregano, salt, thyme, paprika, and black pepper for the marinade.
- Add the chicken thighs to the marinade and toss well to coat. Cover and refrigerate for at least 30 minutes or up to 24 hours for maximum flavor.
- Preheat your oven to 400 degrees Fahrenheit.
- Transfer the marinated chicken to a baking dish, pour the marinade over the top, cover with foil, and bake for 45 to 55 minutes until the internal temperature reaches 165 degrees Fahrenheit.
- Once cooked, uncover the chicken, turn on the broiler, and broil for an additional 2-3 minutes to crisp the skin, watching closely to prevent burning.
Notes
For best results, marinate the chicken overnight to enhance the flavors.
