- 2 cups all purpose flour (plus more if needed)
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup butter (softened slightly)
- 3/4 cups sugar
- 1 large egg
- 3/4 teaspoons pure vanilla extract
- 1/2 teaspoon almond extract
- 16 ounces white chocolate
- 1/3 cup light corn syrup (plus more if needed)
- food coloring (flesh tone and other color for your grad caps)
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Mix flour, salt, and baking powder in a bowl and set aside.
- Cream butter and sugar until light and fluffy.
- Stir in egg, vanilla, and almond extract.
- Add dry ingredients and stir just until combined.
- If the dough is sticky, add a small amount of flour.
- Roll out the dough on a floured surface to 1/8th inch thickness.
- Cut twelve 3-inch circles from the dough.
- Cut out twelve diamond-shaped grad caps from the dough.
- Use the cutter to make a notch in each circle of dough.
- Brush two long edges of the diamond-shaped dough and insert it into the notch.
- Press the seams together with your finger.
- Bake for 10-14 minutes until edges are set and tops look dry.
- Cool cookies completely before decorating.
- Reserve about 2 tablespoons of white modeling chocolate for tassels.
- Color 2/3 of the modeling chocolate flesh tone and the rest in your chosen color.
- Let the colored chocolate rest at room temperature for about 30 minutes.
- Roll out flesh tone chocolate to 1/16th inch thickness and cut twelve 3-inch circles.
- Roll out blue chocolate to the same thickness and cut diamond-shaped caps.
- Brush corn syrup over a cookie and place the colored circle and diamond, pressing seams together.
- Roll modeling chocolate into a tube and use a clay extruder to create tassel strands.
- Attach the strands to the caps using corn syrup, creating a cute tassel finish.
