  • ¼ cup light brown sugar firmly packed
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon almond extract
  • ½ cup jimmies sprinkles
  • ½ cup granulated sugar for rolling the cookie dough balls

Instructions

  1. In a medium mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, sea salt, and baking soda; set aside.
  2. In a large bowl, beat the room temperature butter, granulated sugar, and light brown sugar on medium speed for 3-4 minutes until light and fluffy.
  3. Lower the mixer speed, add the egg and egg yolk, incorporating fully. Then mix in the vanilla and almond extracts until well combined.
  4. Gradually add the dry ingredients in half-cup increments, ensuring everything is thoroughly mixed without any flour streaks. Finally, mix in the jimmies sprinkles until evenly distributed.
  5. Prepare a baking sheet with parchment paper or a silicone baking mat.
  6. Scoop cookie dough using a #40 scoop (about two tablespoons) and place them on the prepared baking sheet. Chill the cookie sheet in the fridge for 2 hours or overnight.

Notes

For a lighter cookie appearance, opt for clear vanilla extract.
