Description

These French Toast Muffins combine the rich flavors of brioche and eggs for a delicious treat. Simple to prepare, they’re perfect for a quick breakfast or snack, bringing warmth and comfort in every bite!


Ingredients

  • 1 loaf brioche bread (14 ounces)
  • 6 large eggs
  • ¼ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • Pinch fine sea salt
  • 1 cups whole milk
  • 1 cup heavy cream
  • 2 teaspoons pure vanilla extract
  • ½ cup salted butter (softened)
  • ½ cup light brown sugar
  • ½ cup all-purpose flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon fine sea salt

Instructions

  1. Butter or grease two standard 12-cup muffin pans and set aside (or use liners).
  2. Cut the brioche bread into ½-inch cubes and transfer them to a large bowl.
  3. In a medium bowl, whisk together the eggs, brown sugar, granulated sugar, cinnamon, and pinch of sea salt until smooth.
  4. Add the cream, milk, and vanilla to the egg mixture and whisk until combined.
  5. Pour the egg and milk mixture over the cubed bread in the large bowl, stirring to ensure all bread is soaked.
  6. Let the mixture sit for 5 minutes.
  7. Use a measuring cup to portion ¼ cup of the bread mixture into each well of the prepared muffin tins (this will yield about 20 muffins).
  8. Cover the muffin pans tightly with plastic wrap and refrigerate for several hours or overnight.

Notes

For a sweeter option, increase the sugar slightly to taste.
These muffins can be topped with maple syrup or fresh berries for added flavor.
Refrigerate leftovers and reheat in the oven or microwave for a quick breakfast.
