- 3 tablespoons butter, divided
- 2 large onions, thinly sliced
- 2 pounds ground beef
- 2 eggs
- 1/2 cup breadcrumbs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon flour
- 1 cup beef broth
- 1/2 cup Swiss cheese, shredded
- 4–5 slices provolone cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a large skillet over medium heat. Cook the sliced onions for 20-25 minutes until they are golden and caramelized, then set half aside for the sauce.
- In a large bowl, combine ground beef, eggs, breadcrumbs, Worcestershire sauce, thyme, salt, pepper, and the remaining onions. Mix gently.
- Shape the mixture into a loaf and place it in a baking dish. Bake for 45 minutes.
- Return the reserved onions to the skillet with the remaining butter. Stir in the flour and cook for 1 minute. Gradually add beef broth, simmer for 5-7 minutes until thickened.
- Top the baked meatloaf with shredded Swiss cheese and slices of provolone. Broil for 3-5 minutes until the cheese is melted and golden.
- Let the meatloaf rest for 5-10 minutes before slicing. Serve with the onion sauce on top.
Notes
For extra flavor, consider adding freshly chopped herbs like parsley or oregano to the meat mixture.
You can use different types of cheese according to your preference, such as mozzarella or cheddar.
This meatloaf pairs well with mashed potatoes or a fresh garden salad.
