Ingredients
Scale
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 yellow onions, thinly sliced
- 1 tablespoon minced fresh thyme leaves
- 2 teaspoons dijon mustard
- 1 tablespoon balsamic vinegar
- 1 1/2 lbs grass-fed 85/15 ground beef
- 1 tablespoon worcestershire
- 1 tablespoon dijon mustard
- 1 tablespoon dehydrated minced onions
- 1 1/2 teaspoons garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 4 brioche buns, toasted in butter
- 8 oz double cream brie, cut into slices
- 2 cups arugula
- 1/2 cup mayonnaise
- 1 teaspoon prepared horseradish
- 1 tablespoon dijon mustard
- 1 teaspoon honey
Instructions
- Caramelize the onions by melting butter and olive oil over medium heat, then adding the sliced onions. Cover and cook for 10 minutes, then lower heat, add thyme, salt, and pepper, and cook until caramelized.
- Finely chop half of the cooled onions and mix with ground beef, Worcestershire, dijon, dehydrated onion, garlic powder, salt, and pepper in a bowl. Form into patties about 1 inch thick with a thumb indentation in the center.
- Prepare the burger sauce by mixing mayo, dijon, horseradish, honey, salt, and black pepper in a small bowl.
- Preheat the grill to 450°F and clean the grates, lightly oiling them to prevent sticking.
- Grill the patties for 3-4 minutes per side. Once done, let them rest and place brie slices on top to melt.
- Assemble the burgers by spreading sauce on toasted buns, adding beef patties, the remaining caramelized onions, and arugula.
Notes
Using a mandolin for slicing onions can save time.
Brie can be replaced with another favorite cheese if desired.
Feel free to adjust spices according to personal taste.
