  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat the oven to 450 degrees Fahrenheit.
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Add the chopped onion and cook, stirring occasionally, for about 3-4 minutes until translucent.
  • Transfer the cooked onions to a mixing bowl and allow to cool for 2-3 minutes.
  • Combine the blue cheese, panko breadcrumbs, kosher salt, and black pepper with the cooled onions.
  • Gently mash all the ingredients together with a fork until well mixed.
  • In the same skillet, add the remaining 2 tablespoons of unsalted butter on high heat.
  • Season the filet mignon steaks with kosher salt and black pepper on all sides.
  • Sear the steaks for 3 minutes on each side until a nice brown crust forms.
  • Top each steak with the blue cheese mixture, then transfer to the oven for 4 minutes (for rare), 5-6 minutes for medium, or longer for well done.
  • Let the steaks rest under foil for 10 minutes before serving.

Notes

Make sure to let the steaks rest before serving to retain their juices.
Adjust the blue cheese and seasoning to your preference for a bolder or milder flavor.
