Description

These Fig and Bacon Goat Cheese Burgers are a delightful combination of flavors, featuring juicy beef, crispy bacon, and creamy goat cheese. Perfect for a quick dinner or backyard BBQ!


Ingredients

  • 1 pound ground beef, 80/20 preferred
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 slices thick-cut bacon, cooked until crisp
  • 3 tablespoons fig jam
  • 3 tablespoons herbed goat cheese, softened
  • ¼ cup caramelized onions, warmed
  • 1 small handful arugula
  • 2 brioche buns, split and lightly toasted
  • ¾ cup mayonnaise
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 small garlic clove, lightly blanched or roasted, then mashed into a paste
  • ½ teaspoon dijon mustard
  • ½ teaspoon coarse sea salt, plus more to taste
  • ½ teaspoon black pepper
  • optional: 1–2 teaspoons chopped fresh parsley or chives

Instructions

  1. Whisk together mayonnaise, olive oil, lemon juice, and Dijon in a small bowl until smooth.
  2. Blend in garlic paste, salt, pepper, and herbs (if desired). Taste and adjust seasoning.
  3. Cover and refrigerate for a minimum of 1 hour to enhance flavors.
  4. Divide ground beef into two equal portions (½ pound each) and gently shape into 4½-inch wide patties, creating a slight indentation in the center of each.
  5. Season patties with salt and pepper on both sides.
  6. Preheat grill or grill pan to medium-high heat and oil the grates if necessary.
  7. Grill burgers for 4–5 minutes on each side, reaching an internal temperature of 130–135°F for medium rare or 140–145°F for medium.
  8. In the last minute, toast buns cut-side down on the grill.
  9. Spread lemon garlic aioli on the bottom buns, approximately 1-2 teaspoons per bun.
  10. Layer arugula on the bottom bun, then place the grilled burger patty on top.
  11. Top each patty with goat cheese, a spoonful of fig jam, caramelized onions, and a slice of bacon.
  12. Complete with the top bun and serve immediately.

Notes

Make sure the burger patties are formed gently to keep them tender.
Use fresh herbs for the aioli to enhance the flavor profile.
Feel free to adjust toppings according to your personal preference.
