- 4 ears corn, husked
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- 1 clove garlic, finely minced
- 1/2 teaspoon cayenne, divided
- 2 tablespoons unsalted butter, melted
- 1/2 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
Instructions
- Boil a large pot of water over high heat.
- Add the corn and cook for 5 minutes until tender and bright yellow.
- Transfer corn to a plate and allow to cool.
- In a small bowl, mix mayonnaise, lime juice, garlic, and 1/4 teaspoon of cayenne.
- Brush or spoon melted butter onto all sides of the corn.
- Generously cover each ear with the mayonnaise mixture.
- Sprinkle cotija cheese, remaining cayenne, and chopped cilantro over each ear.
Notes
For extra flavor, grill the corn instead of boiling it.
