Description

This Elegant Graduation Cake with Fondant Cap Topper is a stunning centerpiece for your celebration. With layers of buttery yellow and rich chocolate cake, it’s covered in a delicious American buttercream frosting and topped with a creative fondant cap and diploma, making it a delightful treat for all. Perfect for marking special milestones!


Ingredients

  • 2 Yellow sheet cakes
  • 2 Chocolate sheet cakes
  • 1 Cotton candy cake
  • 10 cups American buttercream frosting (Tinted yellow with gel food coloring)
  • 4 cups Marshmallow fondant (2 cups of black and 2 cups of white)
  • 1 batch Rice krispie treats (Can also use store-bought)

Instructions

  1. Bake 2 yellow sheet cakes (Dimensions: 9×13), 2 chocolate sheet cakes (Dimensions: 9×13) and 1 cotton candy dome cake (5 inch diameter). Use leftover cotton candy cake batter to make cupcakes if desired.
  2. Allow cakes to cool completely.
  3. Prepare yellow buttercream frosting while cakes cool.
  4. For the cap cake, place the dome cake on a cake board of the same size and frost smoothly with buttercream. Chill for 20 minutes.
  5. Roll out black fondant and cover the chilled dome cake. Smooth with a fondant smoother. Trim excess fondant with a pizza cutter and insert a bubble tea straw into the center.
  6. Cut a square piece of cardboard for the cap top. Color the edges with a black edible marker and spread a thin layer of icing before covering with black fondant. Trim excess fondant as necessary.
  7. Use a small circle cutter for a piece to top the cap. Brush corn syrup on the cardboard, fold a ribbon, and press the circle on top to adhere.
  8. Secure the cap to the dome cake with melted chocolate or royal icing and steam to remove powdered sugar residue.
  9. For the diploma, shape rice krispie treats into a cylinder and spread buttercream on the sides.
  10. Wrap the treat log in white fondant and cut excess. Adhere white fondant circles on the ends with buttercream, wrapping a red ribbon around it.
  11. Assemble by placing the 2 chocolate sheet cakes side by side on a large cake board, adding icing on top, and layering the yellow sheet cakes over the icing.
  12. Smooth the top and sides of the layered cakes with icing, then use a piping bag with yellow icing to create roses on the sides and top.
  13. Determine where to place the diploma and cap, adding supports as needed, and position them on the cake.
  14. Cut out letters for 'Congratulations Class of 2024' using cookie cutters, and attach them to the cake board with icing.

Notes

For a more vibrant color, you can add more gel food coloring to the buttercream frosting.
Make sure to chill the fondant before handling it for easier shaping.
