Description

These egg bites are a delightful blend of flavors featuring creamy cottage cheese, fresh spinach, and roasted red pepper. They are perfect for quick breakfasts or healthy snacks, making meal prep easy and delicious!


Ingredients

  • 12 large eggs
  • 1 cup cottage cheese
  • 1.5 cups shredded cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons butter
  • 2 green onions, chopped
  • 1 cup fresh spinach, chopped
  • 1/2 cup roasted red pepper, chopped
  • 3 cups water

Instructions

  1. Preheat the oven to 325°F and line twelve muffin cups with paper liners.
  2. In a blender, combine eggs, cottage cheese, 1 cup shredded cheese, salt, and pepper. Blend for 8-10 seconds until smooth.
  3. Melt butter in a skillet over medium heat. Stir in green onion and a pinch of salt. Add spinach and roasted red pepper, cooking until spinach wilts (1-2 minutes). Remove from heat and cool slightly before mixing with blender ingredients.
  4. Place the muffin pan on a rimmed baking sheet. Fill each muffin cup with egg mixture about three-fourths full. Top with remaining cheese before transferring to the oven. Pour hot water into the baking sheet to cover the bottom of the muffin cups.
  5. Bake for 26 to 30 minutes until set. Let rest for 5 minutes then transfer to a cooling rack. Store in the fridge for up to 4 days, or freeze for up to 3 months.

Notes

Ensure the muffin cups are filled only three-fourths full to allow for rising during baking.
These bites can be reheated safely from the fridge or freezer; remove the paper liners before reheating.
