Description

Ingredients

  • 2 pounds skinless salmon, cut into chunks
  • kosher salt and pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • ⅔ cup dry white wine
  • ½ teaspoon freshly grated lemon zest
  • 3 tablespoons freshly squeezed lemon juice
  • 4 tablespoons butter
  • ¼ cup capers, drained
  • lemon slices, for topping
  • chopped fresh parsley, for topping
  • jasmine rice, for serving

Instructions

  1. Season the salmon generously with kosher salt, pepper, and garlic powder, ensuring all sides are well-coated.
  2. Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the salmon and sear each side for 1 to 2 minutes until golden brown.
  3. After searing, pour in the dry white wine and let it reduce by almost half, until about ⅓ cup remains.
  4. Add freshly squeezed lemon juice, butter, drained capers, lemon slices, and parsley to the skillet. Gently toss the salmon, allowing it to simmer for 1 to 2 minutes.
  5. Serve the salmon over cooked jasmine rice, garnished with extra parsley.

Notes

You can adjust the amount of garlic powder according to your taste preference.
This dish pairs wonderfully with steamed vegetables for a complete meal.
