- 135g / 2 cups raspberry jelly
- 125g / 1 cup fresh raspberries
- 500g / 17 oz raspberry or strawberry cream sponge roll
- 1½ uk pints / 3½ us cups whole milk
- 1/2 uk pint / 1/2 us cup double cream/heavy whipping cream
- 6 tbsp bird's custard powder
- 6 tbsp white sugar
- 2 tsp vanilla extract
- 400ml / 1½ cups double/whipping cream
- 4 tbsp icing (powdered) sugar
- 1 tsp vanilla extract
- 4 tbsp pomegranate seeds
- 2 tbsp pistachios
Instructions
- Prepare the jelly according to package instructions and pour it into the trifle bowl. Let it cool for about 20 minutes before refrigerating for 1½ hours. Once thick and syrupy, add the raspberries and refrigerate until fully set for 4-5 hours.
- Cook the custard as per package instructions, stirring continuously over low heat to avoid lumps. If lumpy, blend for a smoother texture, then cool slightly for about 15 minutes with plastic wrap on the surface.
- Slice the sponge roll and arrange the pieces along the sides and bottom of the trifle bowl. Soak the bottom pieces with raspberry liqueur for extra flavor.
- Pour the custard over the sponge until it reaches the top of the bowl, ensuring it completely covers the sponge. Let it reach room temperature, then chill in the fridge for a couple of hours.
- Whip the double/heavy cream with icing sugar until soft. Spoon it over the custard and decorate the top with pomegranate seeds, pistachios, or fresh raspberries.

For a vegan version, substitute dairy milk and cream with plant-based options.
