- 1 English cucumber
- 1 teaspoon kosher salt
- 12 ounces Campari tomatoes
- 1/4 small red onion, peeled and thinly sliced
- 3 tablespoons champagne vinegar, red wine vinegar, or cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/3 cup chopped fresh dill
- 1/2 teaspoon freshly ground black pepper
Instructions
- Slice the cucumber in half lengthwise and spoon out the seeds, discarding them.
- Cut the cucumber into thick half-moons and place in a large bowl. Sprinkle with 1/2 teaspoon kosher salt and let sit for 5 minutes to crisp up and release moisture.
- After 5 minutes, discard any cucumber water collected.
- Slice the tomatoes into thick wedges and add to the bowl along with the sliced red onion.
- Drizzle with vinegar, olive oil, honey, and remaining kosher salt and freshly ground black pepper. Toss to coat everything evenly.
- Sprinkle the chopped dill on top and toss again to mix well.
- Serve chilled or at room temperature.
Notes
For an extra crunch, let the cucumbers sit longer to release more moisture.
This salad can be made a few hours in advance; just store it in the refrigerator until serving.
Add feta cheese for a tangy twist.
