Ingredients

  • ½ pound (8 ounces) penne pasta
  • 3 tablespoons butter
  • 1/2 tablespoon flour
  • 2 cloves garlic, minced
  • 2 cups corn, fresh or frozen
  • 2/3 cup heavy cream
  • 1 tablespoon lemon juice, freshly squeezed
  • 1/2 cup parmesan cheese, freshly grated
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1/4 cup fresh basil

Instructions

  1. Boil a large pot of salted water and cook the penne pasta until al dente, about 8-10 minutes. Reserve ½ cup of the pasta water before draining the pasta.
  2. Melt the butter in a large skillet over medium heat until sizzling, then whisk in the flour and cook for 1 minute.
  3. Add the minced garlic and corn to the skillet, cooking for about 2 minutes until fragrant and softened.
  4. Pour in the heavy cream, lemon juice, and reserved pasta water, stirring constantly for about a minute until the sauce is smooth and slightly thickened. Add in the Parmesan cheese, stirring until melted, adjusting the sauce consistency with more pasta water if needed.
  5. Season the sauce with salt and pepper. Combine the drained pasta and fresh basil with the sauce, tossing well to coat.
  6. Serve immediately, garnished with more Parmesan and fresh basil if desired.

Notes

Use freshly grated cheese for the best flavor and texture.
This dish can be customized with additional vegetables or proteins according to your preference.
For a lighter version, substitute half-and-half for heavy cream.
