Description

These Easy Confetti Cookies are a delight with their simple ingredients and cheerful colors. Made with white cake mix, they’re quick to prepare and perfect for any celebration, bringing smiles and sweetness with every bite.


Ingredients

  • 13.25 oz white cake mix box
  • ½ cup unsalted butter (113 g), melted, slightly cooled
  • 2 large eggs
  • 5 tablespoons rainbow confetti sprinkles, plus more for rolling
  • 1 teaspoon pure vanilla extract, optional
  • ¼ teaspoon almond extract, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, combine the dry cake mix, melted butter, eggs, and optional extracts. Stir until a thick dough forms.
  3. Gently fold in the rainbow sprinkles, being careful not to over-mix. The dough will be sticky and tacky.
  4. Let the dough rest uncovered for about 5 minutes until it thickens as the mix absorbs moisture. Test readiness by pressing a finger into the dough; it should not stick.
  5. Use a medium cookie scoop (size #40 or 1.5 Tbsp) to portion out the dough.
  6. Roll each cookie ball in additional sprinkles, pressing lightly so they stick on all sides.
  7. Place the coated dough balls on the baking sheet, spacing them about 3 inches apart. Bake for 10-12 minutes until the edges are set, but the center looks slightly underdone.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

Ensure the butter is slightly cooled to prevent the dough from becoming too greasy.
Experiment with different colored sprinkles for festive variations.
These cookies can be stored in an airtight container for up to a week.
