Description

These Easy Caramel Apple Empanadas are a delightful combination of sweet apple pie filling and creamy cheesecake nestled in a flaky crust. Perfect for a tasty dessert or a fun treat for family gatherings, they are easy to make and irresistible!


Ingredients

  • 2 boxes refrigerated pie crust 14.1 ounce each
  • 1 can apple pie filling 20 ounce
  • 1 package cream cheese, softened 8 ounce
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg separated
  • 2 ½ cups powdered sugar
  • ¼ cup caramel ice cream topping
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 425 degrees F. Remove pie crusts from their packaging and allow to come to room temperature.
  2. Separate egg white from egg yolk in two small bowls, whisk each one separately, and set aside.
  3. Chop apple pie filling into small bits in a bowl and set aside.
  4. Beat cream cheese with granulated sugar and vanilla extract in a mixing bowl until smooth and creamy.
  5. Unroll pie crusts and cut circles using a 4-inch biscuit cutter, re-rolling scraps if necessary.
  6. Spoon half a scoop of apple pie filling and half a scoop of cheesecake filling into the center of each pie crust circle, brushing the edges with whisked egg white.
  7. Fold and pinch the edges of each empanada to seal, placing them on a parchment paper lined baking sheet.
  8. Prick each empanada with a fork before baking and brush the tops with whisked egg yolk.
  9. Bake for about 15 minutes until golden brown, then cool on a wire rack.
  10. Whisk together powdered sugar with caramel ice cream topping and milk to make the glaze, adjusting milk for desired consistency.
  11. Dip cooled empanadas into the caramel glaze and set on parchment paper to finish.

Notes

For a thicker glaze, use less milk; for a thinner glaze, add more milk gradually.
Ensure the empanadas are sealed well to prevent filling from leaking during baking.
These empanadas can be enjoyed warm or at room temperature.
