Description

This Easy Blackberry Pie features a buttery crust filled with juicy blackberries, making it a delightful treat for any gathering. With its simple prep and irresistible flavor, it’s sure to become a favorite at your table.


Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. In a food processor, combine flour, sugar, and salt.
  2. Add cold, diced butter and pulse until coarse crumbs form.
  3. Incorporate cold water and pulse until moist clumps form.
  4. Transfer dough to parchment paper, divide into balls, and flatten into 2 discs without kneading.
  5. Wrap each disc in plastic wrap and chill for 1 hour.
  6. Preheat oven to 400 degrees when ready to bake.
  7. Prepare blackberry filling by combining water, lemon juice, vanilla, and blackberries in a saucepan over medium heat.
  8. Gently stir in sugar and cornstarch, cooking until thickened. Set aside.
  9. Sprinkle flour on the counter and roll out the bottom pie crust to a 12" diameter.
  10. Transfer the crust to a 9" pie plate using a rolling pin.
  11. Spread blackberry filling gently, avoiding edges for easy sealing.
  12. Roll out the remaining crust and place it over the pie.
  13. Trim edges with a knife and seal them by pinching with fingers or a fork.
  14. In a small bowl, whisk egg with 1 tbsp water and brush over the pie's top.
  15. Optionally, sprinkle sugar on top of the pie.
  16. Cut slits in the center so steam escapes.
  17. Bake for 15 minutes at 400 degrees, then reduce heat to 350 degrees and bake for another 45-50 minutes until bubbly and golden brown.
  18. Check at 30 minutes; cover pie if crust browns too quickly.
  19. Cool the pie at room temperature before slicing.

Notes

For added flavor, try using a mix of blackberries and raspberries.
Ensure the butter is very cold for a flaky crust.
If desired, serve with whipped cream or vanilla ice cream.
