This Easy Black Bean Dip features a delightful blend of black beans, jalapeños, and spices, all brought together for a quick and healthy appetizer. Perfect for gatherings or a wholesome snack, it’s simple to make and absolutely delicious!

- 2 tablespoons olive oil
- 1 medium red onion chopped small
- 4 cloves garlic minced
- 2 jalapeño peppers seeded and chopped
- 2 (15-ounce) cans black beans drained and rinsed
- 1/2 teaspoon ground cumin
- 1 teaspoon salt or to taste
- 3 tablespoons fresh lime juice
- 1/4 cup chopped cilantro plus more for serving

Instructions
- Warm the olive oil in a small pan over medium heat.
- Sauté the chopped red onion, minced garlic, and chopped jalapeño peppers for 5-8 minutes, stirring frequently. Remove from heat.
- In a food processor, combine the drained and rinsed black beans, sautéed mixture, ground cumin, salt, lime juice, and cilantro. Process until fairly smooth, leaving some chunks if desired.
- Transfer the dip to a serving dish and garnish with additional cilantro, vegan cheese, and pickled red onions, if using. Serve with tortilla chips.
Notes
Adjust the spice level by adding more or fewer jalapeños according to preference.
For a creamier texture, add a splash of water when processing the dip.
This dip can be made a day ahead for enhanced flavors.
