Instructions

  1. Cream butter and sugar in a large mixing bowl with a hand or stand mixer on medium speed until light and fluffy, about 2 minutes. Add egg and vanilla, beating until combined.
  2. Switch the mixer to low speed, add baking powder and salt, then gradually incorporate flour until the mixture is combined.
  3. Shape the dough into a ball, wrap it tightly in plastic wrap, and freeze for 30 minutes or refrigerate until firm (at least 1 hour, up to overnight).
  4. Preheat the oven to 350°F (175°C). Line a half sheet baking pan with parchment paper or a silicone baking mat.
  5. Remove the dough from the refrigerator; let it sit for 5-10 minutes at room temperature. Roll the dough out on a lightly floured surface to 1/4-inch thick and cut out shapes with an egg-shaped cookie cutter.
  6. Place the cookies on the lined baking sheet, leaving one inch of space between them. Re-roll scraps and cut out additional cookies.
  7. Bake for 8-10 minutes or until edges turn golden brown. Allow cooling on the baking sheet for a couple of minutes, then transfer cookies to a wire cooling rack to cool completely.
