- 1 (1.25-ounce) packet fajita seasoning mix
- ½ teaspoon black pepper
- 2 tablespoons fresh lime juice (1 lime)
- Soft shell fajita tortillas (warmed, optional for serving)
- Fresh chopped cilantro (optional for serving)

Instructions
- Place the diced tomatoes, sliced peppers, sliced onion, minced garlic, and chicken in a 6-quart or larger slow cooker.
- Sprinkle fajita seasoning and black pepper over the chicken, then pour in the lime juice.
- Cover the slow cooker and set it to cook on low for 6–8 hours or on high for about 4 hours, until the chicken is tender and fully cooked.
- Take out the chicken, shred it using two forks, and return it to the slow cooker. Stir to mix with the juices and veggies.
- Serve the mixture in warmed tortillas, garnished with cilantro and sour cream if preferred.
