- 4 cabbage steaks
- 1/3 cup olive oil
- 1 1/2 tsp. minced garlic
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. smoked paprika
- 1 1/2 cups grated parmigiano reggiano cheese
- 1 tbsp. balsamic vinegar
- 1 tbsp. chopped parsley
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Wash and slice the cabbage in half vertically, then cut about 1 inch thick from one half through the stem to keep it intact.
- In a bowl, mix olive oil, 1/3 cup grated Parmesan, minced garlic, salt, pepper, and smoked paprika.
- Brush both sides of the cabbage steaks with the prepared mixture.
- Place remaining Parmesan in piles on the baking sheet, about 1/3 cup each.
- Set each cabbage steak onto its Parmesan bed on the baking sheet.
- Roast in the oven for 20-25 minutes until cheese is browned and crispy.
- Drizzle balsamic vinegar over the steaks and sprinkle with chopped parsley before serving.
- Serve immediately.
