Description

Crispy Fried Zucchini is a delightful treat made with fresh zucchini, panko breadcrumbs, and simple ingredients. This quick snack is perfect for gatherings or as a side dish.


Ingredients

  • 2 medium zucchini, sliced
  • 2 cups panko breadcrumbs
  • 1/2 tsp salt
  • 1 cup flour
  • 3 eggs, beaten
  • oil for frying

Instructions

  1. Heat oil in a large skillet.
  2. Slice zucchini into 1/4" rounds and set aside.
  3. Whisk together breadcrumbs and salt in a bowl.
  4. Put flour into a shallow plate.
  5. Beat the eggs in a separate shallow bowl.
  6. Dredge each zucchini round through the flour, then dip into the beaten eggs, and finally dredge into the breadcrumb mixture.
  7. Fry zucchini rounds in the hot oil until golden brown on both sides, repeating the process until all slices are cooked.

Notes

Ensure the oil is hot enough before frying for a crispy texture.
For extra flavor, season the breadcrumbs with herbs or spices of your choice.
