Description

This Creamy Tortellini Soup is a delightful combination of flavors with ground sausage, fresh kale, and homemade broth. Ideal for quick dinners or hearty meals, this cozy recipe brings comfort in every bowl!


Ingredients

  • 1 pound ground italian sausage, mild or spicy
  • 1 medium white onion, diced
  • 1 large carrot, diced
  • 5 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1/2 teaspoon crushed red pepper flakes
  • 4 cups chicken stock
  • 1 (15-ounce) can white beans, rinsed and drained
  • 1 teaspoon italian seasoning
  • 1 (15-ounce) can fire-roasted diced tomatoes
  • 1 (9-ounce) package cheese tortellini
  • 3 cups chopped fresh kale
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese, plus extra for serving
  • 3 tablespoons minced fresh basil
  • fine sea salt and freshly-ground black pepper

Instructions

  1. Heat a large stockpot over medium-high heat and brown the sausage, crumbling it as it cooks. Transfer browned sausage to a bowl and set aside.
  2. In the same pot, add diced onion and carrot, sautéing for 5 minutes. Stir in minced garlic and cook for another 2 minutes. Then, add tomato paste and crushed red pepper flakes, cooking for an additional 2 minutes.
  3. Pour in chicken stock and add the rinsed white beans with Italian seasoning. Stir and let it simmer until the soup is hot. Cover and cook on medium-low for 5 minutes, until carrots are tender.
  4. Use an immersion blender to purée the soup until smooth.
  5. Add back in the sausage, diced tomatoes, tortellini, chopped kale, heavy cream, Parmesan cheese, and basil. Stir well and cook for 3-5 minutes until tortellini is tender.
  6. Season the soup with salt and pepper to taste, adding approximately 1 teaspoon of salt and ½ teaspoon of black pepper as needed.
  7. Serve hot and garnish with additional Parmesan cheese.

Notes

Feel free to substitute ground turkey for a lighter option.
You can add other vegetables like spinach or zucchini for extra nutrition.
This soup can be stored in the refrigerator for up to 3 days.
