Description

Creamy Chicken Orzo Bake is a delightful mix of tender chicken, savory mushrooms, and cheesy orzo, making it a quick and comforting meal that everyone will love.


Ingredients

  • 1 cup chicken broth
  • 1/2 cup dry white wine (or additional chicken broth)
  • 1 (10.5 oz) can cream of chicken and herb soup
  • 1 1/2 cups orzo
  • 1 (8 oz) can mushrooms (well drained)
  • 1 (2 oz) packet Lipton onion soup mix (dry mix only)
  • 1 1/2 lbs boneless, skinless, thin chicken breasts (or chicken cutlets)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 375°F and prepare a 9×13 casserole dish with nonstick spray.
  2. In a bowl, whisk together the chicken broth, white wine, and cream of chicken soup until well blended. Add the orzo, mushrooms, and onion soup mix, and pour the mixture into the casserole dish.
  3. Season the chicken with garlic powder, onion powder, salt, and pepper. Lay the seasoned chicken on top of the orzo mixture. Tightly cover the dish with foil.
  4. Bake for 55 to 60 minutes, removing the foil after 30 minutes. Make sure the chicken is cooked through and the orzo is tender, adding more cooking time if too wet.
  5. After baking, turn off the oven and sprinkle the mozzarella and parmesan on top of the chicken. Return to the warm oven for 3 to 5 minutes until the cheese melts.
  6. Once done, take the casserole from the oven and let it rest for 5 minutes. Fluff the orzo with a fork before serving. Top with additional parmesan and fresh parsley if desired.

Notes

Feel free to substitute the white wine with more chicken broth if preferred.
Add vegetables like spinach or zucchini for extra nutrition and flavor.
Adjust the seasoning to taste, especially if you prefer a bit more garlic or onion flavor.
