Description

Cottage Cheese Tiramisu Crepe Roll showcases delightful flavors with creamy cottage cheese and a hint of espresso, making it a quick, delicious treat for dessert lovers. Perfect for a light meal or an indulgent dessert, it’s easy to prepare and is bound to impress!


Ingredients

  • ½ cup all-purpose flour
  • ½ teaspoon kosher salt
  • 1 cup 4% cottage cheese
  • ½ cup water
  • 3 large eggs
  • 2 tablespoons unsalted butter
  • 1 tablespoon maple syrup
  • ½ cup heavy cream
  • ¾ cup 4% cottage cheese
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 2 tablespoons cocoa powder

Instructions

  1. Preheat the oven to 350℉ and line a standard size baking sheet (12"x18") with parchment paper. Spray with nonstick cooking spray.
  2. In a high-speed blender, combine the crepe ingredients and blend until smooth.
  3. Pour the crepe mixture onto the prepared baking sheet.
  4. Bake in the oven for 10 minutes at 350℉. After baking, let it cool for a few minutes, then refrigerate for one hour.
  5. To prepare the filling, blend the cottage cheese, syrup, vanilla extract, and espresso powder in a high-speed blender until smooth. Set aside.
  6. In a large bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the blended cottage cheese mixture into the whipped cream until well combined.
  8. On a cutting board, lay the cooled crepe flat and spread the filling over it, leaving 3 inches at one end.
  9. Roll the crepe away from you, starting from the end with the filling and towards the empty edge.
  10. Sift cocoa powder on top, slice the roll, and serve.

Notes

For a stronger coffee flavor, increase the amount of espresso powder to taste.
Make sure to refrigerate the crepes, as this helps in achieving the right texture when rolling.
