- In a blender, combine cottage cheese, eggs, vanilla extract, maple syrup, and sugar. Blend on high for 60-90 seconds until smooth, ensuring no lumps remain for a cake-like texture.
- In a separate bowl, whisk together almond flour, cocoa powder, baking soda, and salt to incorporate air for better rising.
- Pour the blended mixture into the dry ingredients and fold gently with a spatula until just combined without overmixing.
