Instructions

  • Preheat the oven to 325°F and grease an 8×8 inch baking dish with butter or cooking spray to ensure even cooking.
  • In a blender, combine cottage cheese, eggs, vanilla extract, maple syrup, and sugar. Blend on high for 60-90 seconds until smooth, ensuring no lumps remain for a cake-like texture.
  • In a separate bowl, whisk together almond flour, cocoa powder, baking soda, and salt to incorporate air for better rising.
  • Pour the blended mixture into the dry ingredients and fold gently with a spatula until just combined without overmixing.
  • Fold in the chocolate chips carefully, then pour the batter into the prepared baking dish and spread evenly, adding extra chips on top if desired.
  • Bake for 18-22 minutes or until the top sets and a toothpick inserted comes out with a few moist crumbs. Let cool for 5 minutes before cutting into squares.

Notes

Using a blender will result in a finer texture than using a food processor, enhancing the brownie quality.
