- 10 ounces fettuccine pasta (or your favorite pasta)
- 1 teaspoon salt
- 2 tablespoons butter
- 3 cloves garlic, chopped
- 1 cup full-fat cottage cheese
- 1/2 cup parmesan cheese, freshly grated
- 1/2 cup milk
- salt and pepper (to taste)
Instructions
- Bring a large pot of salted water to a boil over medium-high heat. Add the fettuccine and cook until al dente according to package directions, about 2-3 minutes for fresh pasta or 8-10 minutes for dried. Reserve ½ cup of pasta water, then drain and set aside.
- In a large skillet, melt the butter over medium heat until bubbly, about 1 minute. Add the garlic and sauté until fragrant, about 30-60 seconds, being careful not to burn.
- Transfer the garlic butter to a blender. Add the cottage cheese, Parmesan cheese, and milk. Blend until completely smooth and creamy, about 1-2 minutes.
- Pour the blended sauce back into the skillet. Heat over medium-low heat, stirring constantly, until warmed through and slightly thickened, about 3-5 minutes. Add a splash of reserved pasta water as needed to adjust the consistency. Season with salt and pepper to taste.
- Add the cooked fettuccine and toss until evenly coated in the creamy cottage cheese alfredo sauce. Serve warm with additional Parmesan, if desired.
Notes
Feel free to substitute with whole wheat pasta for a healthier option.
