Ingredients

  • 1 tbsp olive oil
  • 1 onion peeled and finely diced
  • 2 cloves garlic peeled and minced
  • 1 carrot peeled and finely diced
  • 3 chestnut mushrooms finely diced
  • 450 g (1 lb) minced beef
  • 120 ml (1/2 cup) red wine
  • 3 tbsp tomato puree
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 1 tbsp worcestershire sauce
  • 1 beef stock cube crumbled
  • 2 x 400 g (2 x 14 oz) tins finely chopped tomatoes
  • ½ tbsp light brown sugar
  • ½ tsp salt
  • ½ tsp black pepper
  • 300 g (10.5 oz) dried spaghetti or fresh pasta
  • small bunch spring onions (scallions) chopped
  • grated parmesan

Instructions

  • Heat the olive oil in a frying pan over medium-high heat and add the diced onion. Cook for 5 minutes until softened, stirring often.
  • Add the minced garlic to the pan and cook for an additional minute.
  • Incorporate the finely diced carrot and mushrooms, cooking for another 2-3 minutes.
  • Stir in the minced beef and brown for 5-6 minutes, breaking it up as you cook.
  • Pour in the red wine, bring to a boil, and let bubble for 2-3 minutes until reduced significantly.
  • Add the tomato puree, oregano, thyme, Worcestershire sauce, crumbled beef stock cube, tins of chopped tomatoes, brown sugar, salt, and pepper. Stir well and bring to a boil. Then simmer for 15-20 minutes until it thickens.
  • Boil salted water in a large pot. Add the spaghetti and cook for 10-12 minutes until al dente.
  • Drain the spaghetti and serve in bowls topped with the bolognese sauce.
  • Garnish with chopped spring onions and grated parmesan before serving.

Notes

For a richer flavor, allow the sauce to simmer longer for deeper taste.
Feel free to substitute the beef with turkey or plant-based mince for a lighter option.
Serve with crusty bread for an extra comforting meal.
