- 1 tbsp olive oil
- 1 onion peeled and finely diced
- 2 cloves garlic peeled and minced
- 1 carrot peeled and finely diced
- 3 chestnut mushrooms finely diced
- 450 g (1 lb) minced beef
- 120 ml (1/2 cup) red wine
- 3 tbsp tomato puree
- 1 tsp dried oregano
- ½ tsp dried thyme
- 1 tbsp worcestershire sauce
- 1 beef stock cube crumbled
- 2 x 400 g (2 x 14 oz) tins finely chopped tomatoes
- ½ tbsp light brown sugar
- ½ tsp salt
- ½ tsp black pepper
- 300 g (10.5 oz) dried spaghetti or fresh pasta
- small bunch spring onions (scallions) chopped
- grated parmesan
Instructions
- Heat the olive oil in a frying pan over medium-high heat and add the diced onion. Cook for 5 minutes until softened, stirring often.
- Add the minced garlic to the pan and cook for an additional minute.
- Incorporate the finely diced carrot and mushrooms, cooking for another 2-3 minutes.
- Stir in the minced beef and brown for 5-6 minutes, breaking it up as you cook.
- Pour in the red wine, bring to a boil, and let bubble for 2-3 minutes until reduced significantly.
- Add the tomato puree, oregano, thyme, Worcestershire sauce, crumbled beef stock cube, tins of chopped tomatoes, brown sugar, salt, and pepper. Stir well and bring to a boil. Then simmer for 15-20 minutes until it thickens.
- Boil salted water in a large pot. Add the spaghetti and cook for 10-12 minutes until al dente.
- Drain the spaghetti and serve in bowls topped with the bolognese sauce.
- Garnish with chopped spring onions and grated parmesan before serving.
Notes
For a richer flavor, allow the sauce to simmer longer for deeper taste.
Feel free to substitute the beef with turkey or plant-based mince for a lighter option.
