Description

  • pounds ground chuck (80% lean ground beef)
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground mustard
  • 1 teaspoon worcestershire sauce
  • ½ tablespoon vegetable oil, for cooking
  • heaping ¾ teaspoon kosher salt
  • 4 slices cheddar cheese
  • 4 hamburger buns (lightly toasted, if desired)
  • burger toppings of choice

Instructions

  1. In a bowl, mix the beef with black pepper, garlic powder, onion powder, ground mustard, and Worcestershire sauce. Do not add salt yet.
  2. Form 4 large meatballs (about 4½ oz each) and pat each into a 1-inch-thick disc, smoothing the edges. Refrigerate for at least 15 minutes or up to 24 hours.
  3. Heat a cast-iron or nonstick skillet over medium-high heat with your exhaust fan on. Season patties with salt.
  4. Coat the skillet with oil and place each burger in the pan, smashing them flat with a spatula to about ¼-inch thick and cooking for about 2 minutes until browned.
  5. Flip the burgers, add cheese, and cook for an additional 2-3 minutes until desired doneness is reached. Place burgers on buns with toppings.

Notes

For best results, do not rush the refrigerating step.
Burgers can be frozen uncooked for up to three months, ensuring proper shape maintenance during freezing.
