Description
This Classic Creamy Coleslaw offers an irresistible flavor with its crunchy cabbage, sweet carrots, and creamy dressing. Perfect as a side dish for barbecues or quick dinner solutions!

- 1 pound green cabbage, shredded (about 6 cups)
- 1 cup shredded carrots
- 3 tablespoons apple cider vinegar
- 3 tablespoons granulated sugar
- 1 cup mayonnaise
- ½ teaspoon celery seed
- kosher salt and freshly-ground black pepper
Instructions
- Combine shredded cabbage and carrots in a large bowl with 1 tablespoon of kosher salt; let it stand for about 1 hour in a mesh colander set over the bowl.
- After 1 hour, discard the water collected in the bowl and dry the bowl. Rinse the cabbage and carrots, then dry them in a salad spinner or between paper towels.
- Put the dried cabbage mixture back into the large bowl.
- Mix vinegar and sugar in a separate bowl until the sugar dissolves. Add mayonnaise, celery seed, 1/4 teaspoon kosher salt, and 1/2 teaspoon black pepper; whisk well.
- Pour dressing over the cabbage and carrot mixture, using as much as you prefer. Adjust seasoning with salt and pepper to taste.
- Cover the coleslaw and chill for at least 1 hour before serving. It can be stored covered in the fridge for up to 3 days.
Notes
Allowing the cabbage to sit with salt draws out excess moisture for a crunchier texture.
Feel free to adjust the dressing to your taste, using more or less as preferred.
This coleslaw pairs well with grilled meats and is a great addition to sandwiches.
