- ¾ cup shredded red cabbage
- ¾ cup shredded carrot
- ¼ cup finely chopped green onion
- ¼ cup mayonnaise
- 2 tbsp greek yogurt (or sour cream)
- 1 tbsp dijon mustard
- 1 ½ tsp apple cider vinegar (or lemon juice)
- ¾ tsp sugar
- ½ tsp salt
- ¼ tsp freshly ground black pepper
Instructions
- Combine green cabbage, red cabbage, shredded carrot, and green onion in a large mixing bowl.
- In a separate small bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until smooth.
- Pour the dressing over the vegetable mixture and toss to coat evenly.
- Serve immediately, or refrigerate for 15-30 minutes to enhance flavors.
