Description

These Chocolate Zucchini Muffins blend irresistible chocolate flavor with healthy zucchini. Easy to make, they are a perfect snack or breakfast treat for chocolate lovers!


Ingredients

  • 2 cups flour
  • 1/2 cup cocoa powder
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 egg
  • 5 tbsp butter, melted
  • 1 tsp vanilla
  • 1 cup milk
  • 3/4 cup chocolate chips
  • 1 cup zucchini, shredded

Instructions

  1. Preheat your oven to 375 degrees F.
  2. Line a 12-cup muffin pan with muffin liners and set aside.
  3. In a large bowl, whisk together flour, cocoa powder, both sugars, baking powder, and baking soda.
  4. Add in the egg, melted butter, and vanilla; mix well. Stir in the milk until combined.
  5. Gently fold in the chocolate chips and shredded zucchini until evenly distributed.
  6. Divide the batter evenly among the 12 muffin liners. Optionally, sprinkle extra chocolate chips on top of each muffin.
  7. Bake in the preheated oven for about 20 minutes.

Ensure the zucchini is well-drained to prevent excess moisture.
