These Chocolate Chip Zucchini Bars are a delightful treat, blending the sweetness of chocolate with healthy zucchini. Perfect for a quick snack or dessert, they are easy to make and sure to please everyone!

- 2 cups zucchini, shredded
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 2 eggs
- 1 tbsp vanilla
- 1 tsp cinnamon
- 1 3/4 cups flour
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 (11 oz) bag chocolate chips
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch pan with non-stick spray and set aside.
- Grate enough zucchini to measure 2 cups (around 2 medium zucchini).
- In a large bowl, cream together the softened butter, brown sugar, eggs, and vanilla until smooth and well blended.
- Stir in the cinnamon, flour, salt, and baking powder until just combined.
- Gently fold in the shredded zucchini and chocolate chips until evenly distributed.
- Spread the mixture evenly into the prepared baking pan.
- Bake for 30-35 minutes, or until a toothpick comes out clean from the center.
- After removing from the oven, press additional chocolate chips into the top of the bars for decoration.
Notes
These bars can be stored in an airtight container for up to 5 days.
Feel free to add nuts for an extra crunch or substitute chocolate chips with white chocolate or butterscotch chips if preferred.
For a lower sugar option, reduce the brown sugar by 1/4 cup.
