Description

This Chinese Chicken Salad features tender chicken, crunchy vegetables, and a zesty vinaigrette, making it an ideal quick and healthy meal for any day.


Ingredients

Scale
  • 1/2 cup vinaigrette
  • 4 cups mixed salad greens
  • 1 cup shredded cooked chicken
  • 1/2 cup shredded carrots
  • 1/2 cup sliced bell peppers
  • 1/4 cup chopped green onions
  • 1/4 cup sliced almonds
  • 1/4 cup crispy chow mein noodles

Instructions

  1. Combine all of the ingredients for the vinaigrette in a jar with a lid or bowl. Shake or whisk until well combined. Refrigerate until ready to serve.
  2. In a large bowl combine all of the salad ingredients.
  3. Pour the vinaigrette over the salad, a little at a time, tossing it together until it's dressed to your liking. Serve immediately.

Notes

Adjust the amount of vinaigrette based on your taste preference.
You can add nuts or seeds for extra crunch.
