- 1 tbsp coriander/cilantro leaves, finely chopped, optional
Instructions
- Preheat the oven to 200°C/390°F.
- In a large bowl, combine the cauliflower florets with olive oil and minced garlic, mixing to ensure even coverage.
- Add chipotle powder, salt, and black pepper to the bowl and toss the mixture until the cauliflower is well coated.
- Spread the seasoned cauliflower on a baking tray and roast for 25 minutes, flipping halfway through, until edges are caramelized and cauliflower is tender.
- Once roasted, drizzle the lime juice over the cauliflower and sprinkle with coriander before serving hot.
