Description

This Chicken Spaghetti dish combines savory chicken, gooey cheddar cheese, and comforting spices. It’s easy to prepare and perfect for a quick weeknight meal or a cozy family dinner.


Ingredients

  • 3 cups cooked chicken
  • 1 pound spaghetti
  • 1 teaspoon kosher salt
  • 3 cups grated cheddar cheese
  • 4 ounces cream cheese
  • 2 (10.5 ounce) cans condensed cream of mushroom soup
  • 1 cup chicken broth
  • 1 (10 ounce) can diced tomatoes with green chiles, undrained
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a 9×13 inch casserole dish with cooking spray and set aside.
  2. Bring a large pot of water to a boil. Add the uncooked spaghetti and salt, cooking for one minute less than the package instructions. Drain and set aside.
  3. In the pot used for cooking spaghetti, combine 2 cups of cheese, cream cheese, mushroom soup, chicken broth, diced tomatoes, onion powder, and garlic powder. Blend well before stirring in the chicken and spaghetti.
  4. Transfer the mixture into the prepared casserole dish. Top with the remaining 1 cup of cheese and bake, uncovered, for 20-30 minutes or until the cheese is melted and bubbly.

Notes

Feel free to customize with your favorite vegetables for added nutrition.
This dish can be made ahead and stored in the fridge before baking, making it an excellent choice for meal prep.
For extra flavor, add some cooked bacon or sausage to the mix.
