  • 4 pieces boneless, skinless chicken breasts pounded to 1/2-inch thickness
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1.5 cups seasoned italian breadcrumbs
  • 0.5 cup grated parmesan cheese
  • 1.5 cups vegetable oil for frying
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 0.25 cup parmesan cheese for topping
  • 2 tablespoons fresh basil chopped for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Prepare three shallow bowls: one with flour, the second with beaten eggs, and the third with a mixture of breadcrumbs and 0.5 cup parmesan cheese.
  3. Dredge each chicken breast in flour, dip into the beaten eggs, then coat fully in the breadcrumb-parmesan mixture, pressing gently for adherence.
  4. In a large skillet, heat the vegetable oil over medium-high heat. Once shimmering, fry the chicken until golden brown on each side, about 3–4 minutes per side. Drain on paper towels.
  5. Spread a thin layer of marinara over the baking sheet and place the fried chicken atop. Spoon 2–3 tablespoons of marinara over each cutlet, then top with shredded mozzarella and a sprinkle of parmesan.
  6. Bake for 20–25 minutes until cheese is melted, bubbly, and slightly browned. Ensure the internal temperature of chicken reaches 165°F (74°C).
  7. Remove from oven and rest for 5 minutes. Garnish with fresh basil before serving.

Notes

For extra crunch, use panko breadcrumbs in the recipe.
Allow the chicken to rest after baking for better flavor and juiciness.
