- 4 cloves garlic, minced
- 2 tbsp fresh basil, chopped
- 1 tbsp dried oregano
- 2 bay leaves
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/4 cup brown sugar
- 1 cup green olives, pitted
- 1 cup pitted prunes
- 2 tbsp capers, rinsed
- 1 tsp salt
- 4 pounds chicken thighs, bone-in and skin-on
- 1 cup white wine
- 1/4 cup fresh parsley, chopped
Instructions
- Peel and chop the garlic. In a large glass or ceramic bowl, mix chopped garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
- Add the green olives, pitted prunes, capers, and a pinch of salt to the marinade.
- Incorporate the chicken thighs, ensuring they are well coated. Cover with plastic wrap and refrigerate overnight or for at least 3 hours.
- Preheat the oven to 180C/350F. Place the chicken and marinade in a large baking pan, or split between two smaller pans for even cooking.
- Pour white wine around the chicken, avoiding pouring directly on the chicken to achieve crispy skin.
- Roast for 50 minutes to 1 hour or until the chicken reaches an internal temperature of 74C/165F and skins are golden. Sprinkle with chopped parsley before serving.
Notes
For best flavor, marinate the chicken overnight.
Ensure the chicken is arranged without overcrowding for even cooking.
You can substitute chicken thighs with drumsticks if preferred.
