This Cheesy Ground Beef Zucchini Skillet is a delightful mix of savory ground beef, fresh zucchini, and melting mozzarella cheese, making it an easy and satisfying dish for any night of the week.

- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 teaspoons minced garlic
- 1 tablespoon worcestershire sauce
- 1 teaspoon italian seasoning
- 1 teaspoon beef better than bouillon
- ½ teaspoon crushed red pepper flakes, optional
- 1 (14.5 oz) can petite fire roasted tomatoes
- 3–4 small zucchini, cut into quarter pieces
- 1 cup shredded mozzarella cheese
Instructions
- In a large skillet over medium heat, brown the ground beef with the onion until no longer pink, breaking it up as it cooks. Drain excess grease if necessary.
- Add the garlic, Worcestershire sauce, Italian seasoning, beef bouillon, crushed red pepper flakes, and undrained fire-roasted tomatoes. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Stir in the zucchini and simmer for another 10 minutes until it starts to soften.
- Top with shredded mozzarella, reduce the heat to low, cover, and melt the cheese for 3-5 minutes. Serve hot.
Notes
For extra flavor, use lean ground turkey instead of beef.
Feel free to adjust the amount of red pepper flakes to your spice preference.
This dish pairs well with a side salad for a complete meal.
