- 3 cups medium shells uncooked
- 3 tablespoons butter
- 1 onion finely diced
- ⅓ cup diced red bell pepper
- 1 teaspoon chili powder
- ½ teaspoon seasoned salt
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1⅓ cups milk
- 3 cups shredded sharp cheddar cheese divided
- ⅓ cup shredded parmesan cheese
- 3 cups cooked chopped chicken
- 4 ounces canned mild green chiles
Instructions
- Preheat your oven to 375°F.
- Cook the pasta shells al dente according to package directions.
- In a skillet, melt the butter over medium heat. Add the diced onion and red bell pepper, cooking until tender for about 5 minutes. Mix in the chili powder and seasoned salt.
- In a large bowl, combine the condensed soup, onion mixture, milk, 2 cups of shredded cheddar cheese, and Parmesan cheese. Stir until well mixed. Then, fold in the chicken, green chiles, and the cooked pasta.
- Pour the mixture into a 9×13 casserole dish and sprinkle the remaining cheddar cheese on top.
- Bake in the oven for 30 to 35 minutes until it's hot and bubbly.
Notes
To add extra flavor, consider using rotisserie chicken instead of cooking your own.
