Description

These Carrot Cake Bars are a delightful treat that blends the warmth of cinnamon with the creaminess of cheesecake. Simple to prepare and incredibly flavorful, they are perfect for quick desserts or snack time!


Ingredients

  • 4 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg yolk
  • 3/4 tsp vanilla
  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 1 egg
  • 1 tbsp vanilla
  • 1 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup carrots, shredded

Instructions

  1. Preheat the oven to 350 degrees. Spray an 8 x 8 pan with non-stick spray and set it aside.
  2. In a medium bowl, combine melted butter and brown sugar.
  3. Mix until smooth and integrated.
  4. Stir in the egg and vanilla.
  5. Add flour, cinnamon, baking powder, and salt, stirring until well combined.
  6. Fold in the shredded carrots.
  7. In a separate bowl, beat softened cream cheese and sugar together until smooth.
  8. Add the egg yolk and vanilla, continuing to beat until creamy.
  9. Spread half of the carrot cake batter into the prepared pan evenly.
  10. Dollop half of the cheesecake mixture over the carrot cake batter.
  11. Layer the remaining carrot cake batter on top, followed by the remaining cheesecake mixture.
  12. Use a knife to swirl the two batters together according to your preference.
  13. Bake for 35-40 minutes until the edges are golden brown and the center has a slight jiggle.
  14. Let cool completely before cutting into bars.

Notes

For best results, allow the bars to cool thoroughly for easier cutting.
Feel free to top with a sprinkle of powdered sugar for extra sweetness!
These bars are great for meal prep, as they store well in the fridge.
