These Blueberry Pie Bars offer an irresistible flavor with juicy blueberries and a buttery oat crust. Perfect for a quick dessert or snack, this easy homemade recipe is sure to please any crowd.

- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- ⅓ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat oven to 350°F and line an 8×8 baking dish with parchment paper, leaving a 1” overhang for easy removal; set aside.
- In a large bowl, stir the flour, oats, brown sugar, baking powder, and salt together. Pour in the melted butter and vanilla, then mix to combine.
- Press ⅔ of the crust mixture into the bottom of the prepared baking pan and set aside.
- In another large bowl, combine the blueberries, lemon juice, sugar, cornstarch, and vanilla. Pour this mixture over the crust in the baking pan, then sprinkle the remaining ⅓ crust mixture on top of the blueberries.
- Bake in the oven for 55 minutes, or until blueberries are bubbling and the crust is golden. Allow the bars to cool completely in the pan before lifting them out using the parchment paper. Slice into 9 bars and enjoy!
Notes
For best results, use fresh blueberries. Frozen blueberries can be used but may require additional cooking time.
These bars are delicious served warm or chilled for a refreshing treat!
Store leftovers in an airtight container at room temperature for up to 3 days.
