- 2 cups all purpose flour
- 1 cup unsalted butter, room temperature
- 1/2 teaspoon salt
- 1/2 cup powdered sugar
- 4 eggs
- 2 cups granulated sugar
- 1/4 cup all purpose flour
- 1/4 cup lemon juice
- 2 teaspoons lemon zest, optional
- 1 cup fresh blueberries
Instructions
- Combine the all purpose flour, salt, and powdered sugar in a medium bowl. Cut in the room temperature butter until the mixture is crumbly.
- Grease a 9×13 inch baking pan and press the crust mixture firmly into the bottom of the pan.
- Bake in a preheated oven at 350°F for 18-20 minutes until lightly golden. Remove and set aside to cool.
- In another bowl, whisk the eggs, then add granulated sugar and flour. Mix in the lemon juice and optional zest until combined. Pour over the cooled crust and sprinkle with blueberries.
- Bake for an additional 20-25 minutes or until the top is lightly golden. Remove from oven and allow to cool on a wire rack.
- Chill in the refrigerator for at least 2 hours. Slice into bars, sprinkle with powdered sugar, and serve.
Notes
The optional lemon zest adds extra flavor, but can be omitted if desired.
These bars can be stored in an airtight container in the fridge for up to a week.
For added sweetness, serve with whipped cream or vanilla ice cream.
