- 3/4 cup butter, softened
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats
- 1 (8 oz) cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 tsp vanilla
- 1 egg yolk
- 1 cup blueberries
Instructions
- Preheat your oven to 350 degrees and spray a 9 x 13 pan with non-stick spray.
- In a mixing bowl, cream the softened butter with both sugars. Add baking soda, salt, flour, and quick oats, and mix well.
- Press half of this mixture evenly into the base of the prepared pan and bake for 13 minutes.
- While the base is baking, prepare the filling by beating softened cream cheese and sweetened condensed milk together until smooth. Mix in vanilla and egg yolk.
- Once the base is baked, take it out of the oven and spread the cream cheese mixture evenly on top.
- Distribute blueberries over the cream cheese layer.
- Sprinkle the remaining oatmeal crumble over the top and gently press down.
- Bake for another 20-25 minutes, until the edges turn golden brown.
- Allow the bars to cool completely before cutting them into squares.
Notes
For added sweetness, consider using fresh blueberries or even a mix of berries.
Store any leftovers in an airtight container in the refrigerator for up to a week.
These bars can also be frozen for longer storage. Just thaw before serving.
