- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste, or extract
- 1 graham cracker, crushed
Instructions
- In a small saucepan, combine the blueberries, maple syrup, and lemon juice. Bring to a boil and reduce heat to low, simmering for 10 minutes until the blueberries reduce by half.
- Remove from heat and let cool for 10 minutes.
- Blend together the cottage cheese, maple syrup, cornstarch, and vanilla bean paste until smooth.
- In popsicle molds, layer the blended cottage cheese and the blueberry sauce.
- Top with crushed graham cracker pieces.
- Freeze overnight or for at least 5 hours.
