- 22 oz. full-fat cottage cheese
- ¼ – 1/3 cup honey
- 1 teaspoon vanilla extract
- 1 cup + ⅓ cup fresh blackberries
- 3 graham cracker sheets
- optional: ½ teaspoon flakey salt
Instructions
- In a high-speed food processor, combine cottage cheese, honey, and vanilla extract. Process on high for 3-5 minutes until thick and creamy.
- Add 1 cup of fresh blackberries to the mixture and pulse until just combined, creating a slight purple color.
- Transfer the mixture to a bowl or loaf pan. Crumble two graham cracker sheets on top and fold into the mixture.
- Garnish with remaining blackberries and crumble the final graham cracker on top. Optionally sprinkle with flakey salt.
- Cover the bowl or pan and freeze for 4-6 hours, or overnight.
- Serve scoops in a dish or on ice cream cones.
