- 1 teaspoon lemon zest

- 1 teaspoon vanilla extract
- 1 sheet store-bought pie dough or homemade, chilled
- 1 egg for egg wash

Instructions
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper.
- In a bowl, combine the mixed berries, granulated sugar, cornstarch, lemon zest, lemon juice, and vanilla extract.
- Roll out the chilled pie dough on a floured surface.
- Transfer the dough to the prepared baking sheet and add the berry mixture in the center.
- Fold the edges of the dough over the berries, leaving the center exposed.
- Brush the edges with the egg wash and sprinkle with coarse sugar if desired.
- Bake for 25-30 minutes or until the crust is golden brown and the berries are bubbling.
