Description

Ingredients

  • 3 lbs baby back ribs or st. louis ribs
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar
  • ½ teaspoon garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon cocoa powder
  • ¼ teaspoon cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon smoked sea salt
  • 1 teaspoon korean chili flakes or ¼ teaspoon cayenne

Instructions

  1. Combine all rub ingredients in a mixing bowl.
  2. If brown sugar clumps, break it down using your fingers.
  3. Allow the mixture to sit for at least 30 minutes before applying to ribs.

Notes

For a more intense flavor, marinate the ribs overnight in the rub mixture.
Adjust the amount of chili flakes according to your heat preference.
